Furthermore, they have implemented a programme to safeguard the surrounding ecosystem, which involves reforestation and the creation of natural habitats for local wildlife. This lot is the standout coffee from Sítio Maranhão their Yellow Catuai, which is processed using the natural method. After handpicking the coffee cherries, they are transported via a short tractor ride to the patio by the farm house where they are left to dry in the sun for several weeks. During this time, the Betti family meticulously monitors the drying process to ensure uniformity and prevent over-fermentation. This variety of coffee is known for its unique sweet and acidic flavour, with its yellow colour indicating a slower maturation process and more complex taste. To achieve optimal growth and production, the Betti family carefully tends to the coffee trees through pruning and fertilisation. Despite producing only 300 bags annually, Sítio Maranhão's commitment to sustainability and quality has earned them a reputation as a highly respected and sought-after producer.
