Huolellinen prosessi auttaa säilyttämään kahvin puhtaan maun, makeuden ja moniulotteisuuden. \- This coffee comes from Ethiopia’s Jimma region and is connected to the Jimma Farmers Multi-Purpose Agricultural Cooperatives Union, which represents 28 cooperatives involved in coffee production and processing across 13,269 hectares. Doyo Cooperative is part of Jimma’s coffee-growing community, where smallholder farmers grow local heirloom varieties at high elevations, often alongside food crops. The altitude, local varieties and careful processing help create a clean, sweet and expressive cup. The cooperative uses a washed process, which has helped improve coffee quality across western Ethiopia over the past two decades. Cherries are carefully received and sorted before processing. They are then pulped to remove the outer skin and fruit, fermented to break down the remaining mucilage, and washed clean. Finally, the beans are dried on raised beds, allowing air to circulate evenly.
