Named after the native romerillo trees that grow across the property, the farm sits among natural springs and mist-covered slopes a setting that supports slow cherry development, clean processing, and vibrant flavour. Ripe cherries are handpicked, floated to remove defects and then pulped and anaerobically fermented in closed tanks for 48 hours.
