> Oscar Chacón makes a Costa Rican charmer out of the common Kenyan SL28 varietal. Grown on the family-run farm Las Lajas, the cherries are honey processed and sun-dried until they reach their desired colour. Oscar creates a unique bed of beans, where the cherries are flipped as the crust forms to produce a consistent lot. Here, floral fig, caramel, and walnut come together in a silky-smooth cup. - Farm: Las Lajas - Region: Los Angeles, Sabanilla de Alajuela - Variety: SL-28 - Altitude: 1500masl - Cupping Score: 86 - Process: Ripe cherry is handpicked then floated and depulped. With mucilage intact it is first sun-dried on raised beds. When dark in colour, seeds are moved to shaded patios where the stack is flipped when a crust forms - Cupping Notes: Round & sweet, floral & silky. Fig & raisin, walnut & chamomile. - Brew Notes: Honey & pear filters. Sweet prune and Lunch Bar shots. Capps like almond croissants.
