> Elegant florals meets punchy tropical fruit in this classically washed Sidra. Grown on volcanically rich soils at El Refugio farm, cherries are processed in an Ecomill - a machine that pulps coffee directly into the fermentation tank. The result is a perfect balance between subtle sweet notes and intense fruity ones. - Farm: El Refugio - Region: Villamaría, Caldas - Variety: Sidra - Altitude: 2030 - Cupping Score: 87 - Process: Ripe cherry is picked, floated and fermented whole for 16hrs. Depulping is is followed by an open ferment in steel tanks for 24hrs before coffee is fully washed in an eco-mill & bed-dried in a shaded solar dryer - Cupping Notes: Elegant, sweet, superb. Floral honey & vanilla, wine gums & naartjie - Brew Notes: Fragrant pineapple & panela filters. Juicy, sweet mulberry shots. Choc-yoghurt cortados.
