Le ciliegie vengono selezionate con cura prima della spolpatura e di una fermentazione di circa 16 ore. Dopo il lavaggio e la classificazione, il caffè in pergamino viene steso ad essiccare al sole su letti rialzati per 14–21 giorni, secondo la tradizione.
