The processing on the island is a wet-hulled process, in contradistinction to washed coffees where drying lasts for up to a day to reach a 10-12% moisture content, the wet-hulled process involved only drying for a few hours with a moisture content of 25-50%. This results in sweeter and fuller bodied coffee.
