The farm sits at 1,600 metres, within a microclimate shaped by the Guachicos River Basin that provides thermal regulation and specific humidity levels favouring sugar development, especially in demanding varieties like Pink Bourbon. Alirio grows Colombia, Caturra, Castillo, and Pink Bourbon across his fully sun-exposed hectares. This lot uses Alirio's signature "Precision Natural" process, a method he has perfected to achieve a clean cup with intense fruit complexity by blending Pink Bourbon and Colombia varieties. Cherries are rigorously selected at peak ripeness, then undergo a 24 hour oxidation phase in the cherry to concentrate flavour precursors. The coffee then moves immediately to mechanical dryers for 4 to 5 days, halting microorganism growth and giving Alirio full control over water activity and the preservation of delicate sensory notes. In 2013, Alirio won the Cup of Excellence, the most prestigious accolade a coffee producer can receive.
