What the Brand Says

BASIC INFO Alisal Typica Mejorado Tasting Note Kumquat + Green tea + White flower Region Ecuador Variety Typica Mejorado Process Washed Altitude 2000 masl Harvest September 2025 ABOUT ESTATE Typica Mejorado is a very unique variety, primarily grown in Ecuador, and is widely believed to have originated from the breeding center in Pichincha province, Ecuador, similar to Giacomo. Although commonly called Typica Mejorado, it is unrelated to Typica. Genetic testing by the World Coffee Research Council shows that it is actually a hybrid of Bourbon and the Ethiopian Landrace. The origins of Finca El Alisal can be traced back to 1965 when ancestors planted the first coffee trees on a hillside in Kilanga County at an altitude of 2000 meters. In 2017, a new generation led by Leonidas Jaramillo took over, initiating a transformation towards specialty coffee by integrating scientific knowledge and modern agricultural practices. This project pays homage to the family heritage while reshaping it in the name of sustainability and innovation. This land is not only a coffee-growing region, but also the heart of a cultural heritage passed down by four generations of passionate coffee growers. At this confluence of land and sea, the traditional cultivation of the local Typica Nacional variety is preserved, while innovative cultivation of premium coffee varieties such as Hennessy Sidra, improved Typica Mejorado, Gesha, and Batian is introduced, showcasing unparalleled terroir charm. During cupping, one can perceive bright acidity of kumquat, refreshing green tea, and aromas of white flowers. 1 / 2 BREW GUIDES Recipe A Bright & Juicy Dripper V60 Grind C40 #24-28 / EK43S #13-16 Water Quality TDS50-100ppm Coffee 15g Water Temp 90-93°C Brew Ratio 1:17 Time 2:00-2:30min Steps ① Circular pour 50g at 0:00 ② Circular pour up to 100g at 0:30 ③ Circular pour up to 170g at 1:00 ④ Center pour up to 250g at 1:30 Recipe B Balanced & Rounded Dripper Kalita Grind C40 #24-28 / EK43S #13-16 Water Quality TDS50-100ppm Coffee 14g Water Temp 90°C Brew Ratio 1:15 Time 2:10min Steps ① Circular pour 50g at 0:00 ② Center pour up to 100g at 0:30 ③ Circular pour up to 150g at 1:00 ④ Center pour up to 210g at 1:30
