This lot, from the Pulpito section, undergoes an intensive post-harvest protocol involving thermal fusion, yeast-driven fermentation, and slow drying, designed to unlock the coffee’s full potential. Cherries are selectively picked, pasteurized with 90°C water to release sugars, and then fermented for 7 days with clarified, variety-specific microorganisms. The result is a cup that bursts with tropical fruit character, high sweetness, and evolving complexity. We’ve roasted it ultra-light to let the nuances shine (rest it for 6 weeks).
