This Yellow Pacamara (sometimes called Yellow Papayo) undergoes a complex, controlled fermentation designed to amplify clarity, tropical fruit, and depth. Harvested at full ripeness, the cherries are fermented anaerobically in sealed tanks, with cultured yeast and finished with a thermal shock to fix volatile aromatics. The result is a wildly expressive profile with tropical energy and a syrupy body. We’ve roasted it ultra-light to let the nuances shine. Expect mango, pineapple, and watermelon, with juicy florals and a funky, dynamic finish.
