Now led by Jhoan and Diego Vergara, the farm is known for its precise fermentation practices and cultivation of exceptional varieties. This Pink Bourbon lot underwent a careful, multi-stage process: 36 hours of anaerobic fermentation in cherry, followed by 12 hours of oxidation, and a second 36-hour anaerobic stage post-pulping. It was then finished with a 30-minute thermal shock at 50°C to preserve and amplify aromatics, and gently dried over 36 hours. We’ve roasted it ultra-light to let the nuances shine. Expect lemongrass and sweet green apple, with a light, clean body and elegant, herbal finish.
