After depulping, the coffee continues fermenting for another 60 hours in sealed bags, finishing with a thermal shock at 50°C before mechanical drying. These techniques amplify sweetness, aromatics, and fruit expression while maintaining clarity. We’ve roasted it ultra-light to let the nuances shine.
