Following careful cherry selection, ripe cherries were fermented aerobically for four days in traditional fique sacks under carefully monitored temperatures. The coffee was then mechanically dried over five days, with drying temperatures gradually increased to achieve optimal moisture content while preserving clarity, sweetness and complexity in the cup.
