This coffee has a sparkling citric acidity and a silky body with a long sweet finish. Clean Funky Terroir Experimental Processing The selected cherries undergo a minimum of 72 hours of oxidation. They are then fermented in blue tanks for 24 hours before transitioning to drying beds. The seeds are rotated and dried for 20 days to ensure consistency. Like all natural coffees, the entire mucilage of the coffee cherry remains around seed as it goes through each processing stage. Variety Sudan Rume is a very unique variety. It’s a hybrid cultivar originating from the Boma Plateau. The harvest is often incredibly small, but we truly believe this coffee is a great example of quality over quantity. We enjoy Sudan Rume for its sweet yellow/red fruit profile and unique complexity.
