This has a bright citric acidity with a light body and a long sweet finish. CleanFunky TerroirExperimental About The Producer Gildardo's farm, El Calamar, is high in the mountains of Paicol on the western edge of Huila. In the recent years, his family has won numerous awards in the local cup competitions and, year over year, their Pink Bourbon impresses the most demanding of clients. In recent months, they have also planted a small amount of Gesha. Gildardo is a husband to Yolanda Bolaños and a father to four kids ranging in age from 20-25. Processing Gildardo hand-picks the coffee cherries at their peak ripeness. The selected cherries are floated to remove any defects. They are then fermented for 30 hours, de-pulped, and then dry-fermented in parchment for an additional 48 hours. The cherries are washed and dried on raised beds for 20-25 days. Variety Pink Bourbon is a variety primarily grown in Huila, Colombia, and while newer, it has quickly grown in popularity for its bright, sweet, and aromatic profiles.
