This coffee has a sparkling finish and a light body with memorable florals and citric acidity. Clean Funky Terroir Experimental Processing Once the coffee cherries arrive at Chelbesa One, they are placed in water and floated for sorting. The cherries are then depulped and left to dry ferment in tanks for 2-3 days. Afterwards, they are washed and placed to dry on raised beds. To ensure an even drying the parchment is constantly moved each day, taking 7-10 days depending on the weather, until the seeds reach the desired humidity. Variety Landrace is an umbrella term that refers to all the coffee varietals endemic to Ethiopia. As the birthplace of coffee, the trees have been growing and cross-breeding for centuries in this country. As a result, there are numerous sub-varietals with some common genetics, but slightly different behavior and taste. In the last few decades, there has been an organized effort to research and identify different endemic varietals growing in Ethiopia by name, disease resilience, and yield production. Transparency We Paid $13.09 USD/KG Roasted Costs $17.25 USD/KG This is our third year working with producers contributing cherries to the Chelbesa One washing station. There are approximately 1,000 farmers that delivered their cherries for this lot, coming from all over the Gedeb Zone.
