This coffee is sweet, creamy and well balanced and roasted as a milk espresso profile. Clean Funky Terroir Experimental About The Producer Daniel Ortega is a lifelong coffee producer. He was one of the first in his area to dedicate his life to coffee production and is still producing fantastic lots at 72 years old. He began by producing Caturra, but found these coffee plants were suffering from leaf rust disease. He replanted his entire farm in 2018 with Pink Bourbon and Tabi. Processing The Pink Bourbon cherries are collected every fifteen days followed by a 24-hour cherry ferment. The next day, the cherries are de-pulped and then left to dry ferment without any mucilage for another 22 hours. The remaining parchment is rinsed and the coffee is dried on solar beds for approximately 15 days. Variety Pink Bourbon is a variety primarily grown in Huila. Though newer than other varietals, it has quickly grown in popularity for its bright, sweet, and aromatic profiles. It is now known to be an Ethiopian Landrace. In the cup we get a creamy almond and nougat sweetness with a confectionary whip cream like finish with a low stone fruit acidity.
