Processing The cherries are picked as ripe as possible and floated to eliminate any overripe or underripe outliers. The cherries are then left in plastic bags to begin an initial fermentation process for 36-40 hours. From there, the cherries are de-pulped and fermented for another 36-40 hours before they are washed. To ensure consistency, Alirio will take some of the cherries throughout their fermentation and place them in water to see if their mucilage washes off easily.
