Papua New Guinea Goroka is full of bright but complex flavors, and has a distinctive terroir. We chose a light roast to enhance delightful notes of asian pear and white tea, and bring out the soft floral undertones. Despite wonderful growing conditions, less than 1% of the world's coffee comes from Papua New Guinea, making this organic decaf a truly unique and distinctive option to have in your rotation. Region: Sourced from the fertile Eastern Highlands of Papua New Guinea, which surround the region's capital of Goroka, the coffee benefits from the high elevation and ideal growing climate - often referred to as the "perpetual spring". Producer: With Goroka as the economic hub, over 50% of the population of the highlands are engaged in coffee production. A network of cooperatives brings together the smallholder farmers who grow their coffee in small "garden plots" alongside their other household crops. Process: This coffee is washed, a process where the fruit is removed from the seeds and then the seeds are fermented. After fermentation, the beans are thoroughly washed and sun-dried on patios or raised beds. Decaffeination: The Swiss Water® Process is a 100% chemical-free method that removes caffeine while preserving the coffee's rich flavors. Green coffee beans are first soaked in pure water to create a Green Coffee Extract (GCE). The coffee to be decaffeinated is then soaked in the GCE, allowing caffeine to migrate from the beans to the CGE naturally through osmosis while the flavor compounds remain intact. This process continues for 8–10 hours until the beans are 99.9% caffeine-free. The caffeine is then filtered out of the CGE, which is reused, and the beans are dried and packaged to later be roasted for a clean, flavorful, and satisfying decaf experience. Our packaging is intentionally designed to be composted. The bag, including the degassing valve, are comprised of PLA and are 100% compostable.
