Farms here are typically small, ranging from one to two hectares, and are deeply connected to both the land and the surrounding ecosystem. While the region was once centered around crops like avocado, many families—including the Garcias—have shifted their focus to coffee over the years, helping shape a more stable and sustainable local economy. Today, coffee is grown alongside fruit trees like avocado, lemon, and banana, creating a diverse, shade-grown environment that supports both quality and biodiversity. Producers in La Victoria are intentional about preserving their land, protecting native forests and water sources while integrating natural practices like using animal manure as fertilizer. This balance of tradition and stewardship is reflected in the care taken throughout production. This lot is made up of Castilla and Colombia varieties, selectively harvested and washed. After fermenting for 15–17 hours in cement tanks, the coffee is dried on patios and raised beds over 8–12 days, resulting in a clean and well-structured cup.
