Situated within sight of Mt. Kenya, Kii receives SL28, SL34, Batian, and Ruiru 11 cherries from its 80 farmer members. Cherries are hand‑sorted before pulping, then fermented overnight, washed, and graded. The parchment dries on raised tables for 8 to 14 days, depending on weather conditions. Kii promotes sustainable practices among its members, encouraging farmers to compost discarded coffee fruit for use as fertilizer and to recycle water from the pulping process.
