What does FCS mean? - FCS stands for Farmers Cooperative Society, the primary organizational unit for smallholder coffee production in Kenya. - A single FCS is typically owned and governed by several hundred to several thousand member farmers, most cultivating under half a hectare each. - Rather than each farmer processing their own cherry, an FCS operates one or more factories, Kenya’s term for a wet mill, where members deliver ripe cherry for sorting, depulping, fermentation, washing, and drying under shared management. - A single FCS name on a bag does not indicate a single farm. It indicates a cooperative structure: many smallholders, one factory, one processing standard. - The factory name (Kii, Kamwangi, Gondo) identifies the specific wet mill within that cooperative, since larger FCS entities often operate several factories across a growing area. - Lot separation happens at the factory level, by delivery day, grade, and processing batch, which is what allows cup differences to be traced back to a specific factory and lot rather than to an individual grower. What does AA mean? - **Bean Size:** AA refers to the largest screen size in Kenya’s grading system, typically 7.2 to 7.8 mm in diameter (screen size 17/18). - **Flavor Profile:** Larger beans are commonly associated with higher-altitude growing conditions in Kenya, and often show bright, complex profiles with citrus, berry, or floral notes. - **Density and Roasting:** That same density makes AA lots roast evenly, but also means they hold onto structure longer during extraction. What is Peaberry? - Kenya Peaberry is defined by a natural mutation where a coffee cherry develops a single, round seed instead of the usual two flat-sided beans. - Representing roughly 5 to 10 percent of a harvest, these beans are hand-sorted from the rest of the lot. - They are known for an intense, sweet, and bright citrus profile.
