Ivan’s son, Rigoberto, has begun cultivating new and interesting varieties on the farm. The Pacamara variety has been one of the best successes, especially when processed as a natural. After the ripest cherries where picked, they were moved to the mill for floating and then dried on African beds for 25 days.
