All the cascara (dried coffee cherry skins) are composted and returned to the land. Mokka is a very old variety from Yemen and gets its name from the port of Mokha. It produces very small cherries and seeds ruling it out as a commercially viable variety but it does present a very interesting and complex flavour profile.
