Conservation is important to the Castro-Kahle family, and they have acquired 1500 hectares of rainforest for ecological preservation in the areas where they grow their coffee. The H17 variety is a hybrid between Catuai and Ethiopian Heirloom. This lot was processed using a traditional natural method where whole cherries are sun-dried on patios. This has created a coffee with red berry and tropical fruit notes.
