Coming to us from a group of nearly 200 individual growers in the state of Chiapas, this coffee shows not only the dedication the Serranos group has for sustainable and organic farming practices but their absolute mastery of it. The difficulty of growing varieties like Bourbon while maintaining organic practices in the face of a devastating bout of leaf rust throughout Mexico cannot be understated. Within the Serrano group each producer processes the crops with their own micro-mill, dries it in the sun on patios, and finally transports it to a dry mill facility where the coffee will be prepared for export.
