Located just north of Australia in the Indonesian archipelago, the country of Timor-Leste has a long history of coffee cultivation, growing the beans under the shady tropical forest canopy. Unlike many coffees from the Indonesian region, this Timor-Leste is processed using the washed method, where the outer fruit of the coffee cherry is removed prior to drying the hard green coffee bean. The result is a fruity yet refined cup, with pleasant hints of lime and grapefruit, a floral hint, and a gently sweet cacao-leaning aftertaste.
