Julio Andres has spent years working out which yeasts pair best with different fruits and how those pairings interact with the coffee itself. For Maypop, he ferments Caturra with fresh pineapple, passionfruit and yeasts selected for those two fruits. He also tailors the fermentation to the variety, bringing out the Caturra’s own character alongside all that fruit. The fruit flavour comes through loud and clear, and that’s part of the fun.
