Coffee Story Las Codornices is a very new coffee farm, purchased in 2010 by Lety Perez and her son-in-law, Hector Ovalle. This purchase was a risk, as the land is in an area where coffee is not usually grown. But against the odds, their coffee grew, and it is often very high quality due to the elevation. Las Codornices is now in its fourth year of planting, and because of the elevation, the development of the plants is a little slower. As such, this year the harvest was small – and though they hope that next year they will be able to complete a normal harvest, we didn’t waste any time in purchasing the entirety of this natural process catuai lot. That’s because we were so excited by this coffee, which immediately stood out on the cupping table with notes of blueberry and strawberry, balanced by a hazelnut aftertaste. Las Codornices practise biodynamic farming, with strictly no chemical herbicides and pesticides. They combine this with a focus on the people who make the farm possible: an example of this is purchasing 150 sheep that not only help to keep their farm weed-free, but also to provide meat and dairy for the worker.
