This meticulous 74-hour process, which combines dry aerobic fermentation and controlled-temperature storage, enhances the coffee's complexity, sweetness, and acidity. The Laurina cultivar, known for its low caffeine and exceptional cup quality, thrives in Jardines del Encanto's nutrient-rich soil and high altitude. Its low caffeine content results in remarkably low bitterness and high sweetness. However, growing Laurina is challenging due to its susceptibility to disease and insects, as caffeine acts as a natural deterrent. Felipe Arcila's expertise and dedication have overcome these hurdles, producing an exceptional coffee that exemplifies innovation and perseverance.
