Coffee Story Fazenda Santa Fe is located near the city of Piumhi, in the state of Minas Gerais, Brazil. The farm is run by Vicente de Paulo and his family, who have a long history of coffee farming in the region. Vicente learned the trade from his father, and started his own coffee farming business when he was just 19 years old. Today, his family manages a property with a total of 662 hectares, 20% of which is preserved as native forest to create a well-balanced environment for the coffee plants. Sustainability is a key priority at Fazenda Santa Fe, and the farm has implemented a number of measures to reduce its environmental impact. In addition to preserving a portion of the land as native forest, the farm has also installed photovoltaic energy panels to generate clean energy and power the farm's operations. When this coffee is harvested, it is brought to the washer station at Fazenda Santa Fe, where it is separated by density (ripeness level). From there, it is processed as either natural or pulped natural, depending on the desired outcome. The natural process involves leaving the coffee cherries to dry in the sun, while the pulped natural process involves removing the outer layers of the cherries before drying. This selection is a Natural Yellow Catuai. After the coffee has been processed, it is sent on to the drying stage, where it is spread out on large concrete patios or placed in mechanical dryers. The goal of this stage is to reduce the humidity of the beans to around 11% to ensure that they are ready for storage and transportation. The drying process is carefully monitored to ensure that the beans are not damaged or over-dried. Roast type We don’t label our coffee as espresso or filter.
