After a rollercoaster year - who remembers those 50% tariffs? - Cotrim Honey is back at Huck, and will be our only Brazil single origin of the 2025 harvest!

Even though this is just the second time we’ve put their family name on our single origin bags, the Cotrim family and their farm, Fazenda Cotrim e D’Alessandro, have been a bedrock at Huck over the past few years.

The majority of the farm is planted with Yellow Catuaí, and we’ve used this coffee as a part of our Blue Orchid and Sound and Vision blends for several seasons running. That coffee is full-bodied, pleasantly-nutty, and sweet. Perfect as a base for our espresso blends, if not something we’d necessarily feature as a single origin.

Recently, the Cotrims have shifted some of their focus towards the higher end of specialty coffee, starting by planting higher quality varieties on the highest areas of the farm, and honing their skills in processing smaller lots. 2024 was the first year those highest areas produced coffee, and the results have already proved amazing. The farm won 5th place in the Brazilian Cup of Excellence with a natural Gesha, and for us, some of the uniquely-Brazilian varieties were just as special.

During our last trip to Brazil, one of our focuses was better understanding coffee varieties. Brazil is far and away the biggest coffee producer in the world, and its government has helped develop countless varieties for its farmers. Many of these were selected for productivity, at the expense of quality. But some are delicious, thriving at Brazil’s lower altitudes. In particular, we’ve found ourselves gravitating towards Catucai 785 and Catigua MG2.

This is our second year in a row roasting a honey-processed Catigua from the Cotrims, focusing on fruit from the highest parcels of the farm. With notes of almond butter, cocoa, pear, and Nilla wafer cookie, the coffee is easy-drinking, and an elevated take on the traditional Brazil profile.
