Cofinet planted this exotic cultivar at their Jardines del Edén farm in Pijao, Quindío, in 2020, and it has thrived in the farm's high-altitude conditions ever since. Pickers selectively harvest only the ripest cherries, transporting them in grain-pro bags during the cool early morning hours to La Pradera, Cofinet's processing centre. On arrival, cherries are floated to remove low-density beans, then hand-sorted to eliminate any underripe or faulty fruit. Wastewater is filtered through vetiver grass beds as part of Cofinet's closed-loop sustainability programme.
