This lot represents the collective efforts of smallholder farmers working with mixed varieties, each contributing their expertise to create a balanced, complex cup. The Process This coffee undergoes a meticulous washed process that highlights clarity and brightness. The journey begins with careful hand sorting to remove any faulty or underripe cherries—ensuring only the best fruit moves forward. The selected cherries are then de-pulped and thoroughly washed to completely remove the mucilage. The beans are placed on raised beds where they're carefully monitored and dried to achieve the ideal moisture content. This traditional method preserves the coffee's intrinsic qualities while allowing the terroir and varietal characteristics to shine through.
