Indian coffee is traditionally fully washed but Sangameshwar have continually experimented with agronomy, variety and processing to explore potential cup profiles. This lot, coming from their celebrated 'Taj' block, takes selectively picked ripe cherries and anaerobically ferments them before drying in a slow, controlled environment.
