Diego's finally done it. This Y-05 is perfect. Prior to processing Diego predetermines a desired flavour profile and meticulously crafts the processing technique to make it a reality. With this iteration of Y-05, our reality is a muscat, chamomile, and champagne cup of Diego's genius-ness. Ripe cherry is sterilised in ozone before a 72hr submerged anaerobic fermentation. Then depulped & fermented another 36hrs with a culture made of the pulp and mucilage. A thermal shock wash follows, locking in flavour, before drying over 34hrs in Diego's Enigma dryer.
