The hyperprocessing treatment for our latest release from this exceptional coffee producer begins with hand-harvesting cherries at peak ripeness to ensure higher concentrations of sweetness in the mucilage. After being sterilised with ozone, the cherries undergo a 48 hour fermentation, are then depulped, and are fermented again with tropical yeast for 36 hours in pressurised tanks. Liquid extracted during fermentation is returned to the tanks with the cherries for an additional 18 hour fermentation. Once this stage is complete, the coffee is thermal shocked with water at 70° and then slowly dried for 30 hours in a low temperature dehumidifier. The outcome of this precision-led process is a stunning expression of the varietal at its finest.
