> WHY THIS COFFEE? We sampled this coffee from a younger coffee producer, Andres Cardona, back in January and we loved it. It's got a syrupy body, loads of flavor that remind us of our passionfruit co-ferment, with more grape and blueberry. Andres fermented the cherries for 96 hours with the addition of sugarcane to elevate the coffees sweetness. This is a light roast! Let this one rest two to three weeks. COFFEE DETAILS Producer: Andres Cardona (more info here) Location: Colombia Varietal: Castillo Processing: natural with a 96-hour fermentation process in closed tanks with water and sugar cane honey is added to achieve a 15% sweetness level Green cost: $12.84/lb Percentage paid to producers: 80% BREW GUIDE How long to rest: Let this one rest three weeks. We taste: Concord grape, blueberry, lychee. Loads of sweetness!
