The Pink Bourbon cherries from Motta Farm were selectively hand picked at peak ripeness; carefully fermented under controlled conditions to highlight the variety’s natural clarity and aromatic balance. After fermentation, the coffee is fully washed to ensure a clean and structured profile, followed by gradual, controlled drying to stabilize sugars and preserve delicate floral notes.
