Colombia Adrian Lasso Typica Mejorado Natural Filter - Single Origin. Finca El Diviso, located in Bruselas, Pitalito, is a family-owned coffee farm with a strong legacy rooted in innovation and quality. Founded by José Uribe Lasso around 28 years ago, the current generation is led by brothers Nestor and Adrian Lasso, and have transformed the farm into a hub of specialty coffee production and experimentation, emphasising innovative fermentation processes to develop unique flavour profiles. This lot consists of 100% Typica Mejorado variety; a hybrid of Ethiopian landraces and Bourbon. Only fully ripe cherries are hand-picked, with an emphasis on density and even ripeness. Cherries are floated and careful hand sorting removes floaters and underripe fruit before fermentation. Processing then begins with a 24 hour pre-fermentation oxidation in cherry, building sweetness and red-fruit complexity before the coffee enters stricter anaerobic stages. Afterwards, the cherries go through two separate 48 hour anaerobic fermentations, which deepen fruit character, floral intensity, and perceived sweetness. A thermal conditioning or thermal-shock step follows, helping stabilise microbial activity and “lock in” the aromatics developed during fermentation. The cherries are then sun-dried on raised beds for 15–20 days, which supports slow, even moisture loss and helps preserve clarity in the cup.
