This is our second coffee we have sourced from Olman Valladarez in recent times. Where his 'Finca Buenos Aires' coffee had a certain wildness, due to the large Maragogype beans it grew. This coffee is much more of a safe-as-houses, balanced, chocolatey and smooth profile. A signature blend of varieties at origin by Olman, this coffee nevertheless showcases a farmer whose journey in coffee has taken him through experimental processes, through to five Cup of Excellence wins. One thing which shines through is the cleanliness of flavour, and as the quality of this blend has increased over time, it has reached a level where we want to showcase this work as a single origin offering.On taking over the family farm, Olman worked to take control of the processing of his coffee by constructing a wet and dry mill on-site. When, in 2002, Olman's farm ran into financial problems arising from quality issues, he began to take a whole new look at quality and what could be achieved by working on best practice cultivation and processing. Over twenty years later, this mission has resulted not only in multiple competition-winning lots but a general level of excellence which extends across his output and can be tasted in this classic cup of Nicaraguan goodness!Enjoy the fruits of Olman's labor!This is our second coffee we have sourced from Olman Valladarez in recent times.
