Variety: Pink Bourbon Process: Washed Sourced by: Macarena We asked Botzonia what coffees they craved. Wilton Benitez’s was their answer. (Thermal) Shocking to say the least (hehe)! Truthfully, after tasting a few of Wilton’s coffees in the coffee universe, we made a mini goal to one day roast one in the BOTZ style. We were lucky to receive a few samples of unique varieties from Wilton with his famous processing techniques. Unsurprisingly, we fell further into pink bourbon madness (gosh, we really have a problem it seems…or do we?!). We ran the data and flavor analytics and the answer was clear – we had found a rare “thermal shock multiplier.” At BOTZ we’ve always been drawn to thermal-shocked processed coffees for their overtly and seemingly delicious (and almost artificial) fruity flavors (who doesn’t love peach rings, right?). We knew the processing technique was powerful, but in combination with the pink bourbon variety we find it mind-altering. The flavor range of this coffee, for us, is truly unprecedented. Citrus, berries, tropical fruits – it has it all. The dry fragrance reminds us of sweet strawberries and sugar covered ruby grapefruits. The cup character leans jammy and intense, but also clear and focused. At its hotter ranges, you’ll find sweet raspberry compote notes and a limeade acidity. As the cup starts to cool, it becomes a tropical medley of pineapple juice, guava, and lychee. Don’t be surprised if you reach the end of your cup and it takes a few moments to ground yourself back in reality after such a transitional fruity experience (we know because it happened during all of our cuppings). We feel extremely proud of the BOTZ rendition of Wilton’s pink bourbon lot.
