> Process: Washed Variety: Tabi and Caturra Sourced by: Shared Source It’s third grade. A huge bag of Starbursts has just been poured in front of our class for an end of the school year celebration. We’re now in a flavor-grabbing frenzy. While the orange and red peeps aggressively hoard all their prized pieces (so typical), the pink peeps daintily shared and conversed (quietly knowing their flavor reigned supreme), and the yellow peeps were always slightly shocked as to how they scored so much candy. Throughout my life, I’ve maintained that Starburst flavors are the window into a person’s character. While cupping recently, it dawned on me that they, too, might be the key to understanding a person’s coffee preferences. These are my own burst opinions, so take them with a grain of salt. Red burst lovers look for richness and depth. Orange burst fanatics look for ripe citrus notes, while yellow burst enjoyers seek delicate citrus profiles. And lastly, pink burst fans might enjoy a mix of tropical and creamy sensations. Nelson Cordoba’s mixed tabi and caturra lot, to me, has cup characteristics that both the red and pink burst admirers cherish. Aroma wise you’ll find a quaint pinkness like bubblegum or strawberry shortcake. Upon taking your first sip, you’ll learn that the coffee has a rich buoyancy and a prominent pomegranate acidity that washes over your palate into a lengthy caramel and buttery finish. It’s a rare coffee scenario where a coffee is simultaneously big and fresh, and I can’t wait for you to experience its unique personality! ***Please note that coffee orders are roasted, processed, and shipped on Wednesdays. The cutoff for orders is 12:00 pm each Tuesday.***
