> **MEET THE PRODUCER |**Founded in 2014, the UCANOCH Cooperative currently comprises about 2200 producers throughout Chiapas, Mexico, and it exists to support, train, and equip those producers through certifications, social welfare programs, and exporter connections. UCANOCH is an important ally for minority producers in Mexico – of its member base, 46% are women, and nearly all belong to the Tzeltal and Tzotzil indigenous communities in Chiapas. The work they are doing helps to pave the way for these producers to sell their coffee on the international market, creating better outcomes for them both personally and professionally. We feel very privileged to offer this lot from UCANOCH, which consists of deliveries from the Los Altos community in Teopisca Nuevo León, Chiapas. **TRUST THE PROCESS |**After being handpicked at peak ripeness, producers throughout Chiapas pulp their lots the same day using manual pulpers. Next, the coffee is thoroughly washed with clean water and then dried either in solar dryers on raised beds (if available to them) or on the roof of their homes, under the sun. TAKE A SIP | If you’re familiar with our color-coded labels, you’ll already know this coffee is all about comfort and familiarity – it’s big, round, and full, but it’s certainly not boring.
