Johan is a young and respected grower who began exploring fermentation and processing innovations from a young age, aiming to push the boundaries of quality and consistency in Huila. This red Bourbon undergoes a detailed natural process with extended fermentation. The cherries are fermented in bags, and then pulped and submerged again in mucilage before being rinsed and thermally shocked with hot water. The result is a playful, candy-like cup with floral hints of cherry blossom, deep notes of dark chocolate, and bright cherry Starburst and Mr. Freeze sweetness. With a medium body, bright malic acidity, and a fruity, lingering finish, this coffee is balanced and expressive: ideal for filter brewing methods like drip, pour-over, and French press.
