After picking, the cherries rested intact for 12 hours before undergoing a 96-hour cold fermentation at 20–22°C. The coffee was then depulped and fully washed. For the drying stage, Jean Paul follows his signature approach. Once the coffee reaches approximately 17% moisture content, it is packed into bags and rested in a dark room for two weeks, allowing moisture to redistribute evenly within the beans. The coffee is then returned to raised beds to complete the final drying phase. This lot beautifully demonstrates the combined advantages of high-altitude terroir and meticulous processing. The cup showcases intense jasmine florals, a distinctive citrus character, and vibrant acidity with sweetness reminiscent of lemon candy and fresh orange juice. View full details
