Each lot is distinct, with variations in soil, aspect, varietal, and sun exposure. These differences are meticulously managed, as each lot is subdivided into 1-5 hectare sectors, each assigned its own agronomist to oversee operations, log data, and ensure smooth execution. In total, 42 agronomists are dedicated to managing 560 sectors with precision. **PROCESS: ** This coffee features the Yellow Bourbon varietal, with only the ripest cherries selected. At Daterra, coffee cherries are pulped without undergoing a fermentation stage to remove the mucilage. After processing, the green beans are sorted through three additional colour-sorting stages to ensure consistency and quality. Separate machines have been developed to collect and process sweepings and fallen beans, maintaining the cleanliness of the Unipac system. Only coffees that meet the farm’s exacting standards for specialty quality are branded as Daterra. Daterra also boasts a micro mill designed for experimental and Masterpiece lots, enabling advanced fermentation techniques such as airlock fermentation, fermentation in darkness, or with the addition of yeasts and adjuncts.
