This Single Origin lot has been produced by nine partner producers of Coopfam cooperative, all located in Carmo do Cachoeira region in Minas Gerais, Brazil. The region of Minas Gerais is well known for producing high quality coffee, with most coffees from this area showcasing profiles with sweet nutty flavours and mild aftertaste. The attitude these farms are located at is very high for Brazil and leads to slow maturation of the cherries. The farms dry all coffee on their own fams on drying patios, with the coffees being further processed by Coopfam cooperative. Process Smallholder farmers collect ripe cherries and dry them on their own farms, respectively, spreading them out on drying patios in layers one cherry deep and subsequently dried for a period of two days. After two days, the drying speed is slowed down by doubling the layer thickness and storing in volcano shaped piles overnight. The drying process takes between 14-18 days.
