> Brazil — Mió Calase A world exclusive to Assembly, this microlot was selected from one of Fazenda Mió's single harvest plots – Ribeirão das Pedras – before being dried as a natural. This process is considered one of the most eco-friendly coffee processes, using little to no water and minimal intervention. Slow drying in a dehumidifier for approximately 9 days, followed by a short resting period in wooden silos, preserves the coffee's sweetness while delivering rich chocolate flavours, ripe stone fruit and a luxuriously full-bodied cup.
